So I’ve been kicking around some thoughts in my head. In my honest moments I admit to myself that I am often in over my head with these three kiddos of mine. They are so ridiculously cute and ridiculously maddening.
With that being said, I’ve decided to use this blog of mine to post some of my favorite easy and healthy go-to mom meals – cause that’s what I make 7 days a week!
…okay more like 6 days a week.
Fine. 5 da- okay, 4 days a week.
Hopefully maybe, just maybe I might be able to throw some ideas out to my fellow moms or busy bakers/cookers who just need some inspiration.
Cause heaven knows, some days I do.
My favorite part is the sneaky zucchini which not only boosts the vegetable value but also adds great moisture to the meatballs.
And I’m not just saying this cause I love me some veggies. These meatballs are seriously so delicious and so moist!
We all know the death of any meatball is a dry meatball.
I know this is a bit sacrilegious to say, but I even prefer the ground turkey. There. I said it.
You can throw these lovelies on a soft roll – or my fave is to put them on some na’an – or pair them with some noodles. Muah! They are just little balls of perfection.
