Truth be told, I actually quite like healthy stuff. Particularly if you can roll it all into a lovely nutrition-packed package.
Taste is one thing about which I do not joke. Well, unless something tastes ridiculously awful and then it only seems fair to have earned a jab or two.
But this stuffed pepper is nothing to throw a jab at.
The southwestern flavor explosion from the salsa, corn, black beans and a sprinkle of taco seasoning give these stuffed beauties a zing and a little kick of heat – depending on your poison of salsa heat. And that zing allows you to sneak in a protein-packed grain like quinoa – which also provides a needed bite and texture.
And it’s fully loaded with vegetables and a tasty, yet healthy grain to kick the year of right!
Oh, and of course some melted cheese on top cause that makes everything gooey and delicious.
