So they say that you “put the lime in the coconut”, but what if you put the coconut in the lime bars?
…quite the brilliant question, eh? (I’m a philosopher by night.) And I’m just the gal to find out!
These bars are the lovechild of a key lime pie and coconut bars with the faint reminiscence of a lemon bar.
I was searching for a dessert that would help me really welcome in that warm weather that I’M SURE is lurking – not so creepily – around the corner. And these tart beauties certainly answered the call!
One bite is like a sojourn to the tropics. Hand me a straw, a ridiculously large hat and a tiny umbrella and I’m there.
I mean, you can’t really go wrong with cream cheese and sweetened and condensed milk! You might worry that these treats would be overly sweet or rich but they’re deftly balanced out with a healthy helping of tart key lime juice. And the flakes of coconut keep things texturally interesting.
And, truly, you put just about anything on this melt-in-your-mouth shortbread-ish crust and I would hoover those puppies in an instant.
Don’t be distressed because these bars don’t look green. Just add in a drop or two of green food coloring if the color throws you for a loopity loop.
All that matters is that they taste DIVINE.
