If’ you’re like me you’ve got an enormous tupperware full of turkey. And I can only eat so many turkey sandwiches. (Although if you shoved a hot turkey panini under my nose, I won’t complain. With a slice of melted muenster, drizzle of gravy, a small mountain of stuffing and I wouldn’t get made at a cranberry or two. Mmmm!)
Time to get creative with that turkey!
What you need is something that is…
- FAST (If you use leftover turkey in this recipe, this beauty can be done in about 30 minutes!)
- SIMPLE (You only have to cut up the onion, pepper and some cilantro – the rest is mostly cans or frozen goods. Throw it all in a pot and dinner is served!)
- Last but greatest of all, DELICIOUS – with a healthy twist. (A few dribbles of cream keeps it rich but most of the mouth-coating decadence comes from good-for-you coconut milk.)
and a few sprinkles of cheese certainly don’t hurt nobody. (Check out that gooey cheese action!^^)
