I’m not what you might call a “summer person”. I don’t love getting all sticky, sweaty and sunburned everyday.
Summertime pre-kids was a different story. Hours of sunscreen, life vests, swim diapers, soggy snacks and chasing slippery kids has made me a bit biased. Good thing they’re so darn cute.
What I DO love are summer fruits. Watermelon, peaches, and all the berries you can fist.
All of these ripe, bursting berries were begging for a pavlova to top. I don’t ignore a call to duty.
Pavlovas, in a nutshell, are meringues with a crisp exterior and a soft, chewy interior.
They’re perfectly light and sweet with a little crunch and I’m 95.8% sure that they’re the stuff that clouds are made out of.
Better yet, I’ve turned them into adorable miniature pavlovas that fit in your palm and, as I see it, make it so that you can enjoy several little bites without feel guilty. They are made up of air, egg whites and berries after all. 🙂
The combination of the sweet, crunchy pavlova shell with the creamy unsweetened whipped cream and the tart, juicy berries is write-home-to-your-Mama good!
I didn’t realize it until we met, but these treats are the perfect summer sweet tooth satisfier!
