Not so deep inside of me I am a health food ninja. Well, a health food ninja with a serious sweet tooth.
Like a WOOLLY MAMMOTH-size sweet tooth.
But the rest of those teeth, well…most of them at least, are dedicated to fresh, fantastic, good-for-you foods.
The list of foods considered “superfoods” is constantly changing. And I’m not entirely sure that the title is really good for much.
BUT if it was, then this quinoa dish would basically be the king of superfoods. It’s got coconut milk, quinoa, raw cashews and of course the ringer: KALE.
It checks a whole lotta those little nutrition boxes while tasting so bright, bold and mouthwatering.
Let me give you the flavor rundown:
The protein-packed quinoa is one of my favorite mouth-textures – like thousands of tiny treasures. The little gems are plumped to life with creamy coconut milk.
The toasted coconut shavings give it a rich nuttiness while the coconut milk mellows and rounds it all out.
All of the garlic, cilantro and lime juice kick your taste buds into overdrive.
And the kale, again, brings it home with a surprising little texture, earthiness and variance in each bite.
It is an emerald feast for the eyes and an even bigger feast for your palate!
