Ah Christmas. The most wonderful time of the year.
…because I can go baking~berserk~CRAZY and no one will blink twice at me.
I can fully unleash the sugar frenzy.
Aaah. It feels so good.
Bring me your chocolate, your cream cheese, peppermint, nutella, toasted nuts, cranberries and cinnamon-sugar by the sleigh-full!
…OK. Holiday Lady Liberty rant is over.
One of my many sweet spots is anything dipped in some kind of peppermint bark coating. I once bit through a glass that had a smudge of peppermint bark on it…not my finest moment. (But I’m not all together ashamed of it either…)
I’m calling these peppermint barked Christmas mouth-wonders “cheater” whoopie pies. Cause – hold your gasp – I use a chocolate cake mix.
Now, before you hit “Send” on that disgusted email, hear me out. Using a pre-made mix can save you some serious time, clean-up and most importantly overall stress – especially if you’ve got a whole partyload of treats to make.
I’ve tried, but I simply cannot stop myself from overdoing the treats and ending up a few empty mugs of wassails past crazy. (Just ask the hubs. He recovers from my “Christmas episodes” just in time for the next year’s holidays to begin. Don’t worry about him; throw him a few pieces of bacon and he’s fine.)
But these cookies, though! Chocolate with a cream cheese filling dipped in peppermint essenced white chocolate. Yowsers!
HOLY MULTIPLE MIND PALACES BLOWN.
I’ve discovered my new kryptonite. Heaven help me and anyone who eats that last whoopie pie.
